Peanut butter addict alert πŸ˜› I promise to make something involving ingredients other than peanut butter sometime, but this will just have to do for now πŸ˜‰


OK, I got a bit too excited there, but ohmygosh these are delish!


For the top and bottom layer –

  • 100g dark chocolate (85% dark)
  • 1 cup chunky organic peanut butter
  • 1 tsp vanilla essence
  • 25 ml honey
  • 2 tbsp coconut oil

For the middle layer –

  • 1 cup smooth organic peanut butter
  • 175 ml of coconut cream
  • 25 ml honey
  • 1 tsp vanilla essence


Melt the coconut oil and dark chocolate together in the microwave, checking every now and again to make sure the chocolate doesn’t burn. Then add the melted ingredients to the peanut butter and mix until fully combined. Add in the vanilla essence and honey and put small tablespoon full’s into silicone muffin trays, placing them in the freezer to harden. Use the mixture sparingly so as to make sure you have enough for the top layer as well, and keep the rest of the mixture in a warm area whilst you make the middle layer. For the middle layer, beat in the coconut cream into the peanut butter until combined, then add in the vanilla essence and honey. Make sure you do this step quickly as the mixture will start the split if you take too long. Take the silicone muffin trays out the freezer and add the middle layer, then place it back in the freezer for about 3-5 mins. Finally add the top layer of chocolate mixture and place back into the freezer until firm. When the sandwiches have set, remove them from the silicone trays and place in an airtight container in the freezer.

Enjoy when you want something sweet, but don’t over indulge πŸ˜‰ Just because it is a ‘healthy’ treat, it still has calories!
