Happy Saturday Everyone!
Today is a bit cold and rainy here in South Africa, but there is no better way to spend a cold day than by baking some yummy cupcakes!
This recipe is a chocolate and peanut butter cupcake recipe. Now this is not your usual cake recipe, but I promise you it is soo yummy!

1/2 cup coconut sugar
1 1/2 cup light coconut milk
2 cups oat flour
3/4 cup coconut flour
4 teaspoons baking powder
1 teaspoons baking soda
2/3 cup cocoa powder
1/2 cup melted coconut oil
2 teaspoons vanilla essence
Chocolate chips (optional)
Pre-heat the oven to 180 degrees celsius, and line your cupcake pans with cupcake holders.
Beat the eggs until light an fluffy in one bowl, add the coconut sugar, coconut milk and vanilla essence and beat for a further 3 minutes. Add the dry ingredients together in a separate bowl, and then spoonful by spoonful, add the dry ingredients and melted coconut oil into the egg mixture.
Be careful not to add the coconut oil in when it is still hot so as to not curdle the mixture. Finally add the chocolate chips to the mixture.
Spoon the mixture into the cupcake holders and bake for about 15 minutes.
For the icing, add smooth peanut butter, icing sugar, cocoa powder and cream together until smooth and the volume is enough.
I used approximately 1 1/2 cups of peanut butter, 2 cups of icing sugar, 3/4 tablespoons of cocoa powder and 3 tablespoons of cream.
Leave the cupcakes to cool on a cooling rack before you ice them, and decorate according to your taste 🙂
