These are perfect for when you are craving bread but don’t want the carbs  They are great to have as a snack, or for breakfast if you are in a rush  I added some cheese to mine for extra flavour.

Ingredients:

  • 100ml Flaxseed (Linseed)
  • 30ml Psyllium husks
  • 250ml Almond flour
  • 10ml Baking powder
  • 10ml Salt
  • 30ml Pumpkin seeds
  • 250ml Buttermilk/ Low fat yogurt
  • 6 eggs
  • 5ml Honey

Method:

  1. Blend the seeds together to make a powder like consistency
  2. Put all the dry ingredients together in a bowl and add the blended seeds to it
  3. Mix the eggs, buttermilk/yogurt and honey together in another bowl
  4. Mix in the wet ingredients into the dry
  5. Place the mixture into Muffin tins
  6. Bake at 180 degrees for 20 minutes

I added the cheese to the top of the muffins, but you can mix it into the mixture before pouring it into the muffin tins angry
