Happy Friday everyone! I, for one, am VERY happy its the weekend 🙂 This week has been a hectic one with the end of exams and getting all my final assignments done!

As I have said in my previous post, I am doing a 30 day clean eating challenge. In order to eat clean you have to be willing to prep and cook your food yourself! I wouldn’t want to put my fate in someone else’s hands, so just cook for yourself so you KNOW 100% what you are putting into your body! Today I am going to share a salad recipe with you. It has quinoa, avocado, cucumber, tomato, feta and bacon in it with a homemade mustard dressing 😛 This is SO yummy and packed full of goodness!

The ingredients:

  • half an avocado
  • 2 medium tomatoes
  • 8 slices of cucumber
  • 2 medium slices of danish feta (chopped up)
  • 3/4 slices of bacon sliced up
  • 1/4 cup of quinoa

Method:

Put the quinoa and 1tsp of salt in a small pot with water fully covering the quinoa, at least 2cm above the quinoa. Let this come to the boil and then simmer until all the water has been absorbed. This should take 15 mins, but keep checking every 5 mins.

Chop up the pieces of bacon and fry them until crispy. Then add all the salad ingredients to a bowl and set aside until the quinoa is ready.

For the salad dressing I made a honey and mustard dressing:

  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of mustard (I used wholegrain mustard)
  • 1 teaspoon of honey
  • a pinch of garlic and chilly powder
  • a pinch of dried oregano

Mix all the above ingredients in a bowl until combined completely.

Finally ad the quinoa to the salad bowl and pour the dressing over! Enjoy 😀
