BIRTHDAY MONTH ๐Ÿ˜€ Whaaaat?! It can’t be March already? This year is flying by!

So it’s been a while since I’ve posted a recipe… but the wait is totally worth it ๐Ÿ˜‰

Following up on my peanut butter addiction, I have perfected the art of overnight oats ๐Ÿ˜› If you have busy mornings or are just not a morning person, like myself, then you will love this easy recipe! I whip it up the night before I have an early training session or busy morning ๐Ÿ™‚

The ‘how to’ and what ya need:

  • Peanut butter – organic (no added sugar/salt)
  • Rolled oats
  • Milk
  • Honey

First boil some water and measure out 1/4 cup of rolled oats. Pour boiling water over the oats in a microwave proof bowl, just enough to soak the oats, and then add a little milk (1 or 2 tablespoons) to just cover the oats. Microwave for 30 seconds, add a tablespoon of peanut butter and mix until smooth, drizzle some honey over the top and put that beauty in the fridge for the night!

You can add some milk to the oats in the morning if it is too sticky, but it should be a smooth, creamy consistency ๐Ÿ™‚ I love having this for breakfast to fuel me for the day ahead of lectures and training!
